Beetroot, orange and feta cheese salad

I guess I have to blame Christmas holidays for this post. I ate too much and thus for now my main dish will be a beetroot, orange and feta cheese salad.

So, here is my salad. Usually in order to eat a salad as a main dish, salad should contain pasta or chicken. 

But this salad is quite an exception, beetroot did its job well. It is also a quite refreshing salad, orange segments are gorgeous in the mouth when biting them. While feta gives you the necessary saltiness that balances the sweetness of beets and tanginess oranges.

Beetroot, orange and feta cheese salad

Ingredients

For making the salad

  • 130 gr fresh spinach
  • 2 medium beetroots, boiled
  • 1 orange
  • 1/3 cup crumbled feta cheese
  • 1 tbsp sesame or linseed

Fo making the dressing

  • 3 tbsp balsamic vinegar
  • 2 tsp Dijon mustard
  • 1 tsp honey
  • 1/4 cup olive oil
  • salt
  • freshly ground black pepper

Instructions

  • In a large pot add water and bring to boil. Add the beetroots and boil until fork tender. 
  • After boiling beetroots, add in the pot cold water and leave the beetroots on it in order to cool.  It will take about 30 minutes. Then rub off the skin from the beets and chop them.
  • Whisk vinegar, mustard, and honey in small bowl. Gradually whisk in oil. Season vinaigrette with salt and freshly ground black pepper.
  • Place spinach and onion in large bowl; toss with vinaigrette.
  • Add beets segments, orange segments and sprinkle with cheese and walnuts.

Todays post was short and quick enough, but it was exactly what I needed after Christmas holidays. A small detox.

    That looks so tasty! Just checked out my fridge – I have the beetroot, the feta, the greens but no oranges – think I might just try the salad with fresh pear pieces and see how it tastes. I know I should probably think of something with a bit of vitamin c instead but something like the bells peppers I have just don’t appeal right now.
