Blueberry and lemon pancakes

Do you know what the wise people say? We must eat breakfast like kings. So please let me serve you a royal breakfast that everyone will enjoy. I am talking of course about the fluffiest pancakes with blueberries and lemon.

Blueberries and lemon

The blueberries star in these pancakes. Blueberries appear in late spring and you may find them in the market during the whole summer. They have a sweet and sour taste, while they have been characterized as the guardian of our health. How could I resist them and not add them to this superb breakfast?

Blueberries love lemon very much, a combination that is for me one of my favorites. But if the lemon is not in your taste, then do not hesitate to experiment and add to the mixture other ingredients that will give your pancakes a spark. An ideal choice would be to add a little ginger or even some other seasonal fruit such as e.g. the peach.

Apart from the wonderful juicy fruits in summer what I am looking for is easy to make recipes. And this is because either I want to spend less time in the kitchen, or because I do not even have a kitchen. Did I confuse you a bit with “without a kitchen”? I am referring to those mornings when you wake up from the rustle of the leaves, under the trees, in a camp, and you have with you only the essentials. A pan, a small gas stove, fresh seasonal fruits, a little water and the magic mixture for Easy Bake pancakes.

You may not be a fan of camping but to love these blueberry and lemon pancakes is not a necessary condition. However, in order to enjoy a royal breakfast at the camping or where there is a lack of the necessary equipment, the Easy Bake pancake mix is necessary.

Blueberry and lemon pancakes

Please let me serve you a royal breakfast that everyone will enjoy. I am talking of course about the fluffiest pancakes with blueberries and lemon.

Ingredients

  • 1 Easy Bake pancakes mixture
  • 275 ml water
  • ¾ cup blueberries
  • lemon zest from 1 lemon
  • butter for frying
  • honey for serving

Instructions

  • In a large bowl, pour the Easy Bake mixture for the pancakes and the water and mix until well combined. Let rest for 15 minutes.
  • Add the lemon zest and blueberries to the mixture. Stir gently.
  • Add some butter in a non-stick pan and when it is hot enough, add two spoonfuls from the porridge. Bake until blisters form on the surface and turn on the other side.
  • Continue with the rest of the mixture.
  • Serve with extra fruits and honey.

So this is how you can enjoy a royal breakfast even in the strangest conditions, such as those of a camping. All you need is Easy Bake pancakes mixture, some water and plenty of seasonal fruit. The blueberry and lemon pancakes will be at least five stars. I guarantee it to you.
