Bruschetta with avocado, cow Mastelo cheese and poached egg. A dish full of pleasant contrasts and flavors that will blow your mind.

I really love this dish. Every bite of it makes you close your eyes and have a smile of happiness. Is it possilble just a breakfast to do all this? Of course it can.

Because when you have so many contrasts in a single bite, you even travel with the mind. The cool avocado dip harmoniously embraces the grilled Mastelo cow’s cheese. While adding a poached egg on top enhances this delicious experience.

Recipe notes

In this particular recipe, what needs a little more attention is the poached eggs. The first egg may not be as beautiful as you wish, but I don’t want you to be discouraged. Let’s go for the next one. You should pay attention to the following while preparing: 

  1. Add the eggs one by one to the pot. Unless you choose to try the method with the cling film. In this case we take a cup and lay the inside with a cling film. Then add olive oil and then the egg. Pull the cling film out of the cup and tie a knot near the egg. Add it in a pot of simmering water for 3-4 minutes. Ready!
  2. In case you stay true to the recipe and do not use a cling film then we use some vinegar. Adding vinegar to raw eggs for at least 2 minutes before cooking helps maintain its shape. Don’t skip this step. 
  3. With or without a cling film, the water in which the egg will boil should simmer.

Ingredients

For the avocado dip

  • 1 ripe avocado
  • ½ onion, finely chopped
  • juice of half a lemon
  • salt
  • freshly ground black pepper

For the poached eggs

  • 4 eggs
  • 8 tbsp vinegar

For the bruschetta

  • 4 bread slices
  • 200 gr cow cheese Mastelo
  • cherry tomatoes
  • salt
  • freshly ground black pepper

Instructions

For the avocado dip

  • Add the avocado in a bowl and mash it with a fork.
  • Add the rest of the ingredients and mix. Set aside.

For the eggs

  • In a small saucepan add water and bring to a boil.
  • In a ramekin add 2 tbsp. vinegar and then the egg. Wait 2 minutes for the vinegar to create a film over them.
  • Lower the heat and let the water to simmer. By using a hand whisk, stir the boiling water in the pot in order to create a whirlpool.
  • Very carefully add an egg and let it cook for 3-4 minutes.
  • When ready, remove the eggs with a slotted spoon and transfer to a kitchen paper. Continue with the rest.

For bruschettas

  • Toast the slices of bread in a toaster or at 200 ° C in the oven for 10 minutes. Set aside.
  • Cut the Mastelo cow cheese into slices and grill it over medium to high heat on both sides until soft. Set aside. 
  • Spread the bruschetta with the avocado dip, add the cow's Mastelo cheese and the egg on top.
  • Add chopped cherry tomatoes, salt, freshly ground black pepper and serve.
