Chicken Caesar Salad
Ingredients
- 1 iceberg lettuce
- 1 chicken breast fillet
- 3 anchovy fillets
- 1 garlic clove, crushed
- 2 tbsp fresh lemon juice
- 1 egg yolk
- ½ tbsp Dijon mustard
- 2 tbsp olive oil
- ⅓ cup sunflower oil
- ⅓ cup grated Parmesan cheese
- Salt
- Freshly ground pepper
- 2 tbsp 2 tbsp olive oil for frying the chicken
- Parmesan shavings for serving
- ½ cup croutons (or homemade)
Instructions
- Season the chicken fillets with salt and pepper, and fry them over medium-high heat in the olive oil for about 4-5 minutes on each side until nicely browned and cooked through. Let them rest, then slice thinly.
- In a large bowl, mash the anchovies with a fork together with the garlic and lemon juice. Once dissolved, add the egg yolk and Dijon mustard. Mix well until smooth.
- Gradually add the olive oil while continuing to mix with the fork, creating a smooth, velvety dressing. Then add the sunflower oil the same way. Adjust salt and pepper to taste.
- Add the chopped lettuce to the bowl with the dressing and gently toss to coat evenly.
- Mix the salad with the croutons, Parmesan shavings, and chicken slices. Toss lightly and serve.
