Choco muffins with cream cheese frosting. Chocolate and cream cheese sounds like a great combination, right? Oh yes it really is! And you are only one step behind in order to discover it.
The combination of chocolate and cream cheese is an ideal choice for those who doesn’t have a sweet tooth. The sweetness of this fluffy chocolate muffin balances perfectly with the slightly cheesy taste of the frosting.

If you read my blog for a long time you will have already noticed that I give special attention to the seasonality of the ingredients as well as to their quality. Also, you may have noticed my love for recipes from scratch. Everything cooked in my kitchen is always of top quality. Especially now that I have a new role, that of mother. Now I feel that I have to give extra attention even there is no time for this.
And somewhere there, between a busy schedule and my need for quality in the kitchen, I met the Easy Bake products. Easy Bake was created by Saint George Mills in order to provide simple, quick and various delicious goods for the whole family and your friends. Focusing on developing top quality products, Saint George Mills has launched a full series of Easy Bake mixes like snack bars, muffin, pizza base, crepes, multiseed bread and chocolate cake. Easy, fast, but above all quality as the ready mixes of the Easy Bake series do not contain palm oil.

The Easy Bake products really stand out for their quality as, among other things, they do not contain palm oil. But why is it important not to have a palm oil product?
Palm oil is a type of vegetable oil derived from the fruits of the palm tree and has gained great popularity among food producers, as there is a growing trend among consumers for products with only natural ingredients.
However, the use of palm oil in the products has a negative impact on the planet as for years palm oil producers have destroyed huge areas of tropical forests which they have replaced with plantations for palm oil.
Thus, aiming at a responsible way of cooking, it is wise to choose products that do not contain palm oil.
HOW TO MAKE THE PERFECT FROSTING?
Cream cheese frosting has a difficulty in terms of its thickness. It is extremely sensitive to temperature as it softens very easily and does not hold its texture. But we can enhance its thickness by adding a few tablespoons of cornflour. In this way the frosting will hold its texture while at the same time we will not sweeten it more.

Choco muffins with cream cheese frosting
For the muffins:
- 500 gr. Easy Bake Choco Muffins mix
- 150 gr. water (or ⅔ cup of tea)
- 150 gr. seed oil (⅔ mug of tea)
- 1 egg
For the cream cheese frosting:
- 60 gr. cow butter
- 110 gr. cream cheese
- 250 gr. powdered sugar
- 2-4 tbsp. cornflour
Instructions:
- In a bowl, mix the muffin mixture, water, seed oil and egg until smooth.
- Add the mixture into a muffin pan and fill them by 3/4.
- Bake in a preheated oven at 190°C for about 17 minutes. Remove from the oven and allow them to cool before adding the frosting.
- For the cream cheese frosting, whisk the butter and cream cheese in the mixer very well until fluffy.
- Add the powdered sugar in 3 portions, until the frosting becomes smooth.
- Gradually add the cornflour until the frosting becomes as thick as you want.
- Coat the muffins with the cream cheese frosting.
Tips:
To achieve a smoother frosting, sift the powdered sugar before adding it to the mixture.
