These are the cookies you have always dreamed of. Soft cookies with dark chocolate, lavender and salt. Yes lavender, you read that right. And to be precise, we are talking about lavender sugar, which pairs perfectly with chocolate and salt. You will love them.

What is lavender sugar?

Lavender sugar may sound strange, and it may even seem difficult to find. But we will not buy it, we will make it. As it is nothing else but granulated sugar flavored with lavender. How is this going to happen? Very easy. All you need to do is add granulated sugar along with the dried lavender in a jar that seals well. You will need two cups of sugar and one tablespoon of dried lavender. For best results and a more flavored sugar, it is good to beat the lavender in the blender so that it crumbles.

May I use regular sugar?

If you wish to use regular sugar instead of lavender sugar feel free. Nevertheless, I would suggest you to add lavender sugar as it incredibly pairs with chocolate and salt. But it is not just that lavender sugar pairs with the other ingredients, but that it turns this seemingly simple cookie into something exciting. Each bite is full of contrasts which at the same time bond harmoniously with each other.

Recipe tips

The recipe is very easy and does not require special knowledge of baking. All you have to pay attention to is the following. You need to place your cookies in the shape of a ball in the parchment paper. Do not be tempted to press them, they will spread on their own in the oven. While you will need to leave the necessary distance so that they do not meet each other.

Soft cookies with dark chocolate, lavender and salt

Soft cookies with dark chocolate, lavender and salt. A cookie where all the flavors pair harmoniously with each other, a cookie that will steal your heart.

Ingredients

  • 150 gr butter, room temperature
  • 60 gr brown sugar
  • 140 gr lavender sugar
  • 1 egg, large
  • 280 gr all purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 150 gr dark chocolate, finely chopped
  • fleur de sel

Instructions

  • In a stand mixer, on medium speed, beat the butter together with the two types of sugar for about 5 minutes, until the mixture is fluffy.
  • Add the egg and vanilla extract.
  • Then add the flour, baking powder and baking soda. Beat until well combined.
  • After covering the mixture with a wax, transfer it to the refrigerator for 1 hour.
  • Use a cookiescoop to scoop out the cookie dough and transfer on a baking pan  lined with parchment paper. Leave a lot of space between them because they will spread in the oven. Do not press them with your hands. Sprinkle each biscuit with a little salt and lavender sugar.
  • Bake in a preheated oven at 170°C air for 10-12 minutes.
  • Remove from the oven and let them set.

So this was my recipe for soft cookies with dark chocolate, lavender and salt. All flavors pair harmoniously with each other, transforming this simple cookie to a divine one. If lavender scares you you can skip it but it will not be so divine as I said earlier.
