Healthy sunny Sundays.
Little darling, it’s been a long cold lonely winter. Little darling, it feels like years since it’s been here. Here comes the sun. Here comes the sun, and I say let’s make some pancakes.
I really, really love sun. I live in Greece and back in 2013 I was thinking of moving abroad due to economic crisis. One of the reasons that kept me here, besides family and friends, was the sunny weather. The feeling of a sunny day is very crucial to me. I know that many people won’t understand it but I cannot imagine myself living in a country where sun is missing. And no, here in Greece we do not just enjoying sun and drinking ouzo. We also work, and we work hard and a lot of hours. That is why sun is crucial for many of us. You see, it is for free and no one can take it away. Maybe climate change but this is another story.
Well, it is Sunday, the last Sunday of March. Many people during March starting to think that they have to lose some weight since summer is loading. I am one of them. During winter I do not pay a lot of attention to calories. But I have to.
Today I was craving for pancakes but without the calories and a battle started in my head: pancakes VS summer. And the winner is…oatmeal pancakes! At the beginning I was a little bit reluctant regarding their taste but the result was pretty good! I tried a recipe by food.com in which I added a ripe banana and I didn’t add ground cinnamon on the mixture.
- 1 1⁄2cups rolled oats
- 1⁄4teaspoon salt
- 1⁄2teaspoon baking powder
- 1 egg, lightly beaten
- 1cup nonfat milk
- 1⁄2teaspoon vanilla extract
- 1⁄2 ripe banana
Put oats in a blender and blend until ground to a flour consistency. Combine oat flour, salt and baking powder in a large mixing bowl; mix well. Combine egg, milk, vanilla and 1/2 ripe banana in a blender and mix well.
Stir liquid mixture into dry mixture; mix until just moist. Allow to rest 5 minutes. Heat a nonstick large skillet or gridle over medium heat. When hot, pour 1/4 cup batter for each pancake.
Cook until bubbles form on surface of pancake. Turn over and cook until lightly browned.
I garnished pancakes with 1 teaspoon of honey and some fruits. I had mango, berries and banana. You can also add some unsalted almonds. You can also add ground cinnamon when serving with bananas.
After having this delicious and healthy breakfast, wash the dishes (Alkis, I promise, I will), put your sunglasses and go out for a stroll. It’s a lovely sunny Sunday! Enjoy the day!
