Homemade vegan tacos with mushrooms and tofu, or otherwise pleasure in one bite. A recipe that you will enjoy so much. Especially if you are one of those people who want to gather friends around a table. The only prerequisite is to have frozen margaritas and good mood.

THE RECIPE WITH AT A GLANCE

This recipe is pretty easy, and can be made even easier if you prefer to buy tortillas from a grocery store. Those of you who know me also know my love for anything handmade. Of course, my rhythms have changed a lot now and I do not have that much time to for doughs from scratch. However, this dough for homemade tortillas is very easy, it is made in a very short time and does not require special skills.

As for the filling, you will just need to put the mushrooms in the oven with 2-3 ingredients, and fry the tofu a little. What may be difficult for you is the sauce. And this is not because it is difficult to prepare, but because it has some special ingredients such as black garlic and soy sauce.

Before we move on to the ingredients section, I need to make the necessary clarification. This recipe for homemade tortillas is not the authentic one. And this since to taste the authentic Mexican tortillas we must have the right flour. I did not have the right flour, nor could I find it. But I also did not want to look for it. I wanted to be able to make a thin dough, easy to prepare to accompany my mushrooms and tofu.

If you want you can keep the tortillas in the freezer for a long time. But first make sure that they do not dry out.

Recipe ingredients

So if you are in the mood for Mexican nights on the balcony then get the following.

For homemade tortillas you will need: all-purpose flour, cornflour, salt, water and sunflower oil.

When it comes to filling , the options are endless. Personally, I chose to put pleurotus mushrooms and tofu. For the filling, in addition to the two basic ingredients, you will need black garlic, sugar, salt, pepper, soya sauce, fresh thyme and olive oil. While a necessary condition to enjoy to the fullest the homemade tacos is one. Have plenty of fresh coriander, spring onions, radishes and limes.

What is tofu?

Tofu is a vegan product made from soy milk. Its preparation is similar to cheese, but the main difference is that the role of milk is held by a white liquid that the soy beans produce after they have first been soaked in water.

It is very popular in many countries of the East such as Japan and China. In recent years, however, tofu has crossed the borders and can now be found in many kitchens. It is one of the most popular ingredients used by those who follow a vegetarian or vegan diet.

Can I use other mushrooms?

Personally, I love pleurotus mushrooms, however you can add your own favorite kind of mushroom. Add fresh herbs, salt and pepper and put in the oven. It may take a different baking time, keep that in mind.

Ingredients

For the tortillas

  • 1 ½ cup all purpose flour
  • ½ cup corn flour
  • ⅔ tsp salt
  • ⅔ tsp baking powder
  • 55 ml sunflower
  • 160 ml water

For the mushrooms

  • 500 gr pleurotus mushrooms
  • 2-3 tbsp soya sauce
  • salt
  • freshly ground black pepper
  • fresh thyme

For the tofu

  • 220 gr tofu
  • 5 black garlic cloves
  • 3 tbsp olive oil
  • 3 tbsp water
  • 2 tbsp soya sauce
  • 1 tbsp brown sugar
  • freshly ground black pepper

For serving

  • radishes
  • fresh coriander
  • fresh onions
  • limes

Instructions

For the tortillas

  • Add all the solid ingredients for the tortillas to the bucket of the mixer. Stir lightly by hand and form a hole in the center.
    1 ½ cup all purpose flour, ½ cup corn flour, ⅔ tsp salt, ⅔ tsp baking powder
  • Having the mixer on medium speed, add the sunflower and water. Knead for about 2 minutes, until the dough comes off the walls.
    55 ml sunflower, 160 ml water
  • Transfer the dough to a floured surface and divide it into 10 balls of equal weight.
  • Press the balls lightly with your palm and let them rest for 15 minutes. Take care to cover them with a clean towel so that they do not dry out.
  • After 15 minutes, and with the help of a rolling pin, we open the balls in discs with a diameter of 15 cm.
  • Add each tortilla in a pan over high heat for about 1 minute on one side, and 15-20 seconds on the other.

For the mushrooms

  • In a pan add the mushrooms, soy sauce, salt, freshly ground black pepper and fresh thyme. Mix very well.

  • Bake in a preheated oven at 200°C for about 20-30 minutes.

For the tofu

  • Press the tofu with kitchen paper to remove the water and then cut into small cubes. Press again each cube separately.
    220 gr tofu
  • In a blender add the black garlic, water, soy sauce, brown sugar, salt and freshly ground black pepper. Beat well until the sauce is homogeneous.

  • Add the olive oil to a pan and as soon as it heats up, carefully add the tofu.
    3 tbsp olive oil
  • Fry for about 10 minutes on medium heat, stirring often. Once the tofu is caramelized, add the sauce. Cook for about 1 minute and then remove from the heat.

For serving

  • Serve the tortillas with mushrooms, tofu, finely chopped radishes, spring onion, fresh coriander and lime drops.
