I don’t have to tell you I love you. I fed you pancakes.
When you are 20 you are looking forward for the weekend in order to party, but when you are 30 you can’t wait for Saturday morning pancakes.
Saturday every morning could not be a proper Saturday morning without pancakes. During the week, I barely have time to eat some corn flakes and thus when weekend approaches I give extra attention to breakfast. And as they say we must eat breakfast like a King, lunch like a prince, and dinner like a pauper. The recipe is super easy and can guarantee a delightful breakfast.
- 3/4 cup of milk (as an alternative you can add 200 gr. yoghurt)
- 2 tablespoons of melted butter
- 1 egg
- 1 cup. white flour
- 2 tsp baking powder
- 2 tablespoons sugar (or less if you want to eat a lighter version)
- 1 tsp vanilla extract
- 1/2 tsp salt
In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
You can serve pancakes with fresh fruits, yogurt, jam, crumbs dark chocolate or maple syrup. I usually use red raspberry berries, some yogurt and crumbs of dark chocolate. Since it is not possible to find during the year fresh red raspberry berries I keep them in the refrigerator, that’s why in the photos they look like a jam.
Moreover, if you are not a lover of sweets flavours as I am you can try to serve pancakes at a more “saltier” version. Fry eggs and some bacon. Add a slice of cheddar cheese on the top of the pancake, then bacon and at last the egg. Garnish with some fresh pepper and extra virgin olive oil on the top and enjoy!
