If you want to experiment on Smoke Thursday this year, do yourself a favor and try this recipe. Kebabs of Florina, small tbites full of flavor and aromas. You will love them.

Taking a look at the recipes I have published so far, I think today is the most personal. I have a special love for these kebabs. Perhaps most hearing the word kebab will go your mind to the familiar kebab. But I’m referring to these tiny bites that no one can believe can eat just one.

WHAT ARE KEBABS?

Kebabs are a type of meatball that consists of three different minced meat and plenty of spices. They are from Florina, where they are considered one of the most delicious appetizers. Personally, I love them since I have been eating and enjoying them since I was a kid. In fact, my mom still tells me about the times we passed in front of a well-known kebab shop without stopping and I pulled her sleeve, showing her my empty mouth, suggesting that she feed me kebabs.

WHAT MINCED MEAT DO WE USE FOR KEBABS?

For a good kebab we should use three types of minced meat. To a greater percentage we use ground beef which should be relatively greasy. Next is the pork and lamb. The result will be extremely tasty and the smell while grilling will drive you crazy.

CAN I SKIP ANY KIND OF MINCED MEAT?

If reading the recipe you were tempted to skip some type of minced meat then I have good news for you. Of course you can skip some type of minced meat. But they will not be kebabs. Come on, go make another recipe. I’m sure you will find the one that suits you perfectly.

THE INGREDIENTS OF THE RECIPE

As I mentioned above, in order to enjoy these wonderful dishes, you must add three types of minced meat (beef, pork and lamb). Apart from the minced meat, do not forget to add the following:

  • An onion and a clove of garlic
  • Cumin, oregano, paprika, black pepper, and red pepper flakes
  • Breadcrumbs
  • Lard or olive oil

I imagine that making your own lard (of course I show you here how) or finding it in the market is a bit difficult. Whenever in this case you can replace it with olive oil.

For serving traditionally you will need chopped onion and red pepper flakes. Personally, however, I preferred to add yogurt, cabbage salad, but also a little mustard. And for God’s sake do not forget an ice cold beer.

Ingredients

  • 500 gr ground beef
  • 250 gr ground pork
  • 250 gr ground lamb
  • 1 onion
  • 1 garlic clove
  • ¾ tsp ground cumin
  • 1 tsp oregano
  • 1 tsp paprika
  • ½ tsp freshly ground black pepper
  • ½ tsp red pepper flakes
  • salt
  • 4 tbsp breadcrumbs
  • 2 tbsp lard or olive oil

Instructions

  • With the help of a blender, mash the onion and garlic.
  • In a large bowl add all the ingredients for the kebabs and mix well.
  • Cover the mixture and leave in the fridge for at least 6 hours, or overnight.
  • Shape the kebabs into an elongated shape of 25 grams each.
  • Bake on the grill until they get a nice color on all sides.

So this was the recipe for Florina kebabs. A recipe that I really love very much as it has for me both emotional and enormous taste value. I will be very happy to try it, I am sure it will not disappoint you.
