Oven-baked oatmeal and buckwheat with apples. To be precise, oatmeal with buckwheat in the oven with caramelized apples and nuts. And what apples! Caramelized apples with coconut sugar. I hope this recipe to accompany you and give aroma and color to the hazy autumn mornings.

Someone could say that baked oatmeal and buckwheat with apples tastes like apple pie. And this is because oats with buckwheat behave like flour. It is an easy and quick recipe which is ideal for those who want a light but delicious breakfast.

Can I substitute coconut sugar?

I personally chose to caramelize the apples using coconut sugar. But if you do not like its taste or do not have it, you can easily substitute it. You can substitute it with either the granulated sugar, or with brown or with honey. In case you choose to substitute it with sugar then add the same amount. But if you choose honey then reduce the amount by 20-30%.

What apples should I choose

For oatmeal with buckwheat in the oven you will need about four to five apples. As it concerns their variety you choose depends on your preferences. You can add any variety you want, as long as you have one thing in mind. If you choose a very sweet apple then it will be good to reduce the sugar, or to remove it completely. Otherwise, that is, if you choose to add a sour apple, then you may need to add a little more sugar.

How to server oven baked oatmeal and buchwheat

This dish can be served as is, without something extra. It is best to serve it as soon as it comes out of the oven. Personally, I only added milk. Also when serving it you can correct any failures regarding the sugar. That is, if the final result is less sweet than you want, then you can add a little honey to it.

Ingredients

  • 4-5 apples, into cubes
  • 50 gr butter
  • ⅓ cup coconut sugar
  • 2 cups oatmeal flakes
  • 2 cups buckwheat flakes
  • ⅓ cup nuts, chopped
  • ⅓ cup coconut sugar
  • 1 tbsp baking powder
  • ½ tsp ground cinammon
  • 3 eggs
  • 4 tbsp butter, melted
  • 2 cups milk

Instructions

  • In a large skillet, over medium heat, melt the butter. Stir constantly until the butter starts to foam.
  • Once the butter is golden brown, add the diced apples and coconut sugar. Cook the apples, stirring occasionally, for 10-15 minutes, or until they take on a deep brown color. Set aside.
  • Preheat the oven to 170 ° C.
  • In a large bowl add all our ingredients except the eggs, melted butter and milk. Mix well.
  • Then add the eggs, butter and milk. Mix well and add them to a pan.
  • Spread the mixture in the pan, and then add the caramelized apples. Bake for 30-35 minutes.
  • Serve straight from the oven with milk.
