- 100 g roasted Florina peppers (or roasted sweet red peppers if preferred)
- ½ tsp oregano
- ½ tsp black pepper
- 1 tsp sweet paprika
- ½ tsp cayenne pepper (adjust to taste)
- 30 g Dijon mustard
- 70 g feta cheese
- 70 g kasseri cheese (or mild semi‑hard cheese of choice)
Instructions
- Prep the Base:Place the tomato paste and roasted peppers in a food processor.
- Add Spices & Mustard:Add oregano, black pepper, sweet paprika, cayenne and Dijon mustard.
- Blend:Blend until smooth and creamy.
- Incorporate the Cheeses:Add the feta and kasseri cheeses and pulse briefly — just enough to incorporate them without fully pulverizing, so the texture remains slightly chunky if desired.
- Serve:Scrape into a bowl and serve warm or at room temperature.
