I think many people will like today’s recipe. It is healthy, delicious, and easy to make. These little snacks will drive you crazy. Peanut butter fingers.

When I started making it I did not expect it to be so addictive. I ate the first bite and immediately realized that many bites will follow. The base consists of ground oats and coconut oil. In the middle you will find peanut butter, which also contains a little coconut oil and honey. On the top is covered with dark chocolate mixed with coconut oil, while a little salt was necessary.

WHY TO ADD COCONUT OIL?

As you will read above in this recipe the coconut oil was used a lot. This is for one reason, the capacity of coconut oil to solidify at low temperatures. That’s why we have to keep our snacks in the fridge. Otherwise they will start to collapse. Of course, the fact that coconut oil has a wonderful smell also helps.

IS IT Necessary to add salt?

Salt has conquered the top of this delicious snack. Personally I love very much the combination of sweet and savory. Salt has the ability to highlight other flavors. If you want you may add a small amount of salt on one spot and not on the whole surface. But you will see that then you will want to add everywhere.

LET’S VEGANIZE IT

The recipe for peanut butter fingers as it is is not suitable for vegans. However, it becomes very easily vegan as the only ingredient that we have to replace is honey. Honey can be replaced with either maple syrup or agave.

Ingredients

For the bottom

  • 1 ½ cup ground oatmeal
  • 4 tbsp coconut oil
  • 2 tbsp honey

For the filling

  • ⅔ cup peanut butter Kiss the earth
  • ⅓ cup honey
  • ¼ cup coconut oil

For the top

  • ¾ cup dark chocolate finely chopped
  • 1 tbsp coconut oil
  • ½ tsp salt

Instructions

For the bottom

  • In a bowl add the ground oats, coconut oil and honey. Mix well and spread in a small pan (22 * 22cm) pressing the mixture down with your fingers. Bake for 15 minutes at 170°C. Remove from the oven and leave to cool.

For the filling

  • In a small saucepan add the peanut butter, honey and coconut oil. Simmer for 2 minutes, stirring often. Spread the mixture over the oats and put it in the fridge for at least 1 hour or until it is completely firm. Alternatively, we can place it in the freezer.

For the top

  • Add the chocolate and coconut oil in a bowl suitable for a microwave oven. Place in the microwave until the chocolate melts. Spread over the peanut butter layer and refrigerate for at least 20 minutes until the chocolate is completely firm and the bars have cooled.
  • Once the chocolate is firm, cut it into portions. Store in the refrigerator.
