If you don’t already have a sourdough starter, you can easily make your own by following one of these detailed guides:
Sourdough Pita Bread for Souvlaki (Greek-Style Pitas)
Ingredients
- 250 g strong white flour (12%+ protein)
- 250 g yellow flour (Greek durum flour)
- 150 g sourdough starter
- 300 g water
- 1½ tsp honey
- 1½ tsp salt
- 50 g olive oil
For serving
- salt
- dried oregano
Instructions
Mix the Dough
In the bowl of a stand mixer add the water and sourdough starter.Add the flours and honey, then begin kneading using the dough hook.Add Salt and Oil
Once the dough starts to come together, add the salt and olive oil.Continue kneading until the dough becomes smooth and gathers around the dough hook.First Rise
Cover the dough and let it rise until doubled in size.In winter, the dough can be left on the kitchen counter overnight for a slow fermentation.Divide the Dough
Degas the dough and divide it into 120 g portions.Shape each portion into a ball, cover them and let them rest until slightly puffy, about 1 hour.Shape the Pitas
Using a rolling pin, roll each dough ball into a pita about 20 cm (8 inches) in diameter.If the dough sticks, lightly dust with cornstarch.Cook the Pitas
Cook the pitas one at a time in a well-heated nonstick skillet.Cook 2–3 minutes per side, until golden and cooked through.Finish
Sprinkle the warm pitas with salt and oregano before serving.
