Most of the people I know they love summer for endless swimming in the sea and refreshing cocktails. Me?
I love summer for the seafood after a long day on the beach. Until now I wasn’t able to go to the sea but I have cooked myself and Alkis a dish smelling like sea; orzo with roasted shrimps, feta cheese and white wine. If you want some summer vibes in your kitchen follow the recipe.
For making roasted shrimps you will need the following:
- 1½ lb. shrimp
- 2 tbsp. olive oil
- 6 clove garlic
- ½ cup of roughly chopped fresh flat-leaf parsley
- 2-3 small hot red cherry peppers, chopped
- ¼ cup of dry white wine
For cooking orzo you will need:
- 300 g orzo (medium size)
- 3 tablespoons olive oil
- 1/2 onion, finely chopped
- 2 3/4 cups chicken broth
- 2 Tbsp butter
Meanwhile, pour 3 tablespoons of olive oil into a pot, over low heat, add the onions and sauté until soft. Then, add the orzo and stir with a wooden spoon. After 2-3 minutes, be careful not to burn orzo and then add a ladle of hot chicken stock to the orzo and stir until the liquid is fully absorbed.
When the orzo appears almost dry, add another ladle of stock and repeat the process. It’s important to stir constantly, especially while the hot stock gets absorbed, to prevent scorching, and add the next ladle as soon as the orzo is almost dry. Continue until the chicken broth ends.
Add some butter and keep it covered for 2-3 minutes before serving with the roasted shrimps and feta cheese.
Pair with delicate and light white wine and enjoy!
