Banana bread with honey, olive oil and whole wheat flour
An ideal snack for your sweet little cravings that will boost your energy during a demanding day. Ideal for those who avoid refined sugar, as it has only honey.
Servings: 1 banana bread
- 120 ml olive oil
- 270 gr honey The Queen & the Sea
- 3 eggs, large in room temperature
- 3 mashed ripe bananas, (around 330 gr)
- 190 gr strained Greek yogurt
- 330 gr whole wheat flour
- ⅔ cup finely chopped nuts mix
- 1 ½ tsp baking soda
- ½ tsp salt
- 1 tsp ground cinnamon
Preheat the oven to 170 ° C and grease a 34cm*10cm loaf pan.
In a stand mixer add the olive oil and honey. Whisk.
Then add the eggs, mashed ripe bananas and strained yogurt. Whisk just until combined.
Add the flour, the nuts, the soda, the salt and finally the cinnamon. Whisk just until combined.
Pour the mixture into the loaf pan and bake on a preheated oven for 50-60 minutes, or until a clean knife inserted into the center comes out clean.
Set aside to cool for 10 minutes inside the loaf pan, and then transfer the banana bread to a wire rack and to completely cool.
