In a large bowl add the hard flour, yeast and a pinch of sugar. Add the warm water and mix with a wooden spoon.
Add the olive oil and salt to the mixture. First mix with a wooden spoon and then knead by hand. Knead until you get a soft and pliable dough.
Lightly flour the bowl we used, return the dough, cover with a clean towel and let it rest. Wait until it doubles in volume, about 2 hours.
Shape 22 equal balls and form the tree. Start at the base with 6 balls, then add 5, 4, 3, 2 and 1 at the top. Finally, add one more to the base.
Spread with a beaten egg and bake in a preheated oven at 170°C for 15-20 minutes.
In a small bowl, mix the fresh herbs, the melted butter and the chopped garlic.
Once it comes out of the oven, sprinkle the Christmas tree with the mixture of herbs and freshly grated parmesan.
