Spaghetti with rocket pesto, spinach and basil with poached eggs on top. A very fresh, quick and easy recipe that will steal your heart this spring.

Ingredients

  • 500 gr Spaghetti MISKO NO6
  • 120 gr baby spinach
  • 80 gr rocket leaves
  • 1 cup basil leaves
  • 2 garlic cloves
  • ½ cup freshly grated Parmesan cheese
  • 50 gr pine nuts, roasted
  • 2-3 tbsp olive oil
  • salt
  • pasta cooking water

For the poached eggs

  • 4 eggs
  • 8 tbsp vinegar

Instructions

  • Fill a large pot with 5 liters of water and put it on high heat. Once the water starts to boil, add 35 gr. salt and add the MISKO Spaghetti No. 6. Stir with a fork and let it boil for as long as the package says.

  • In a small pan, lightly roast the pine nuts to bring out their aromas. Set aside.

  • Add the olive oil, garlic, spinach, arugula and basil in a blender and beat to mash the ingredients.
    120 gr baby spinach, 80 gr rocket leaves, 1 cup basil leaves, 2 garlic cloves, 2-3 tbsp olive oil
  • Then add the pine nuts and beat until well combined.

  • At the end, add the parmesan and beat for a few seconds. If the pesto is thick enough then add a little of the boiling water of our pasta.
    ½ cup freshly grated Parmesan cheese
  • Pour the pesto into a large bowl and then add the hot spaghetti. Mix them and if necessary add extra water from what the spaghetti has boiled.
  • Serve with poached eggs, a few basil leaves and a little olive oil.

For the poached eggs

  • In a small saucepan add water and bring to a boil.
  • In a ramekin add 2 tbsp. vinegar and then the egg. Wait 2 minutes for the vinegar to create a film over them. 
    8 tbsp vinegar, 4 eggs
  • Lower the heat and let the water to simmer. By using a hand whisk, stir the boiling water in the pot in order to create a whirlpool.Very carefully add an egg and let it cook for 3-4 minutes.
  • When ready, remove the eggs with a slotted spoon and transfer to a kitchen paper. Continue with the rest.
