What Is Armenoville Ice Cream?
Armenoville is a semifreddo-style vanilla ice cream layered with caramelized almonds, crunchy meringue, and rich salted caramel sauce.
It’s a dessert that once symbolized special occasions in Greece — especially in Thessaloniki, where it graced bakery windows from the 1960s onward.
This ice cream isn’t just a recipe. It’s nostalgia in a loaf pan.
A Little History
Though its exact origin is fuzzy, Armenoville likely got its name from a blend of French and Armenian influences — with the name possibly referencing “Armenonville,” a historic French château.
In Greece, Armenoville became known in the mid-20th century as a festive frozen dessert: served sliced like a cake, coated with chocolate or caramel, and often topped with roasted nuts.

Armenoville Ice Cream Recipe
Ingredients
For the caramelized almonds:
- 50 g granulated sugar
- 100 g (⅔ cup) roasted salted almond
For the cream base:
- 200 g (¾ cup + 1 tbsp) heavy cream, cold (35% fat)
- 400 g (1⅔ cups) plant-based whipping cream, cold
- 400 g (1⅓ cups) sweetened condensed milk
- 1 tsp vanilla extract
For layering:
- 100 g (3.5 oz) meringue cookies
- 100 g (⅓ cup) salted caramel (see notes)
Instructions
Caramelized Almonds
- Place a non-stick pan over medium heat. Gradually add the sugar — let each addition melt before adding the next.
- Once the final layer of sugar melts, stir gently with a silicone spatula and toss in the almonds.
- Coat them well, then transfer to parchment paper to cool. Once cooled, chop finely.
Whipped Cream Base
- Whip the heavy cream to stiff peaks. Transfer to a large bowl.
- In the same mixer bowl, whip the plant-based cream with the condensed milk until thickened and fluffy.
- Gently fold into the first whipped cream. Stir in vanilla and chopped almonds.
Assemble
- Line a 10×35 cm (4×14 in) loaf pan with plastic wrap.
- Spread ⅓ of the cream mixture into the pan. Top with ⅓ of the crumbled meringue. Repeat twice, finishing with the cream layer.
- Reserve some meringue for topping later.
- Freeze for 6–8 hours or until solid.
- Let sit at room temperature for 5–10 minutes before slicing. Decorate with extra meringue and salted caramel.
