
Mushroom Orzotto (One-Pot)
If you’re after something cozy, hearty, and just a little bit elegant, this mushroom orzotto is it. Think of it like risotto’s cousin — only here we use Greek kritharaki (orzo), which brings a lovely, gently chewy texture and a comforting, creamy finish.
Tips for the perfect mushroom orzotto
- Use warm stock/liquid: Keeping the liquid warm helps the orzo cook evenly without getting “shocked”.
- Stir regularly: Gentle, frequent stirring releases starch and builds that silky, creamy texture.
- Mix your mushrooms: A blend of white mushrooms and portobello (plus shiitake for depth) makes the flavor more complex.
- Finish with a touch of lemon: A little squeeze at the end brightens the butter- and parmesan-rich sauce.
Variations to try
- With truffle: Drizzle a little truffle oil at the end for a gourmet finish.
- Lenten/vegan-style: Swap the butter for olive oil and the parmesan for a plant-based cheese.
- With chicken: Add sautéed chicken breast pieces along with the mushrooms for a full meal.
- With seasonal veg: Peas, zucchini, or spinach add color and extra nutrients.
- With graviera instead of parmesan: For an even more Greek profile, finish with grated graviera.
Mushroom Orzotto
Creamy, easy, and a little bit gourmet — a risotto-style dish made with Greek orzo.
Ingredients
- 400 g kritharaki (orzo), preferably “Thick” cut
- 500 g mushrooms (white or portobello), sliced
- 30 g dried shiitake mushrooms
- 1 onion, finely chopped
- 2 cloves garlic
- 1/2 glass dry white wine
- 1 liter warm water
- 1 tsp Vegeta seasoning
- 50 g butter
- 70 g parmesan, finely grated
- 2–3 tbsp olive oil
- Salt
- Freshly ground black pepper
- Fresh thyme
Instructions
- In a small saucepan, warm the water with the Vegeta. Add the dried shiitake and let them soften and infuse the liquid (about 10 minutes). Strain, finely chop the shiitake, and set them aside. Keep the infused liquid warm.
- In a deep sauté pan, heat the olive oil. Sauté the fresh mushrooms with a pinch of salt, pepper, and thyme until they take on some color. Remove and set aside.
- In the same pan, sauté the onion and garlic until translucent.
- Add the orzo and stir for 1–2 minutes to lightly toast and coat it in the aromatics.
- Pour in the white wine, stir, and let the alcohol evaporate.
- Add the warm shiitake-infused liquid gradually, one ladle at a time, stirring regularly. Continue until the orzo is tender but still has a slight bite.
- Near the end, fold in the chopped shiitake, the sautéed fresh mushrooms, the butter, and the parmesan. Stir until the orzotto is glossy and creamy.
- Serve right away with freshly ground pepper, extra thyme, and more parmesan if you like.
