Strawberry frozen yogurt, an unexpectedly refreshing dessert that can perfectly substitute an ice cream. Fragrant, creamy and delicious. Can you ask for something else?

This is a very easy recipe as long as you have an ice cream machine. Because although there are methods to make ice cream without an ice cream machine (beat the mixture every half hour, for about 3-4 hours), in this particular recipe I did not try it. So I can not guarantee that we will have the same creamy result without the ice cream machine.

WHAT TYPE OF YOGHURT SHOULD I USE?

For the strawberry frozen yogurt you should strained Greek yogurt. You may use if you want full fat or low fat. Personally I used low fat strained Greek yogurt and the result was excellent despite the lack of fat.

WHY DO WE MARINE STRAWBERRIES?

I chose to marinate the strawberries for one night so that they release the excess moisture. In addition, the liquid released by the strawberries during their marinating can be used to make a kind of sauce. How? In a very simple way.

In a small saucepan you may thicken the strawberry liquid with a little corn flour, about 1/2 tbsp. This process will give us a delicious thick strawberry sauce. But, be careful, you should first dissolve the cornflour with a little of the liquid in a bowl and then add it to the pot and mix very well with a whisk.

May I add another fruit?

If you are in the mood for experimentation and you want to add some other fruit you go for it. I would suggest to add a similar fruit like e.g. raspberries. Keep in mind that what this recipe needs is 300 gr. puree. So either substitute a few strawberries with raspberries and make your own mixture, or add only raspberries.

WHY TO ADD GLUCOSE SYRUP

The use of glucose syrup in frozen yogurt is generally enhances the flavour while significantly improves its texture, as it makes it provides smoothness and creaminess. In addition, the use of a small amount of glucose syrup reduces the formation of crystals during cooling, which significantly improves its structure.

You can find glucose syrup easily in supermarkets. As glucose syrup is made from corn, keep in mind that the jar will probably have on its label a corn.

Strawberry frozen yogurt

Strawberry frozen yogurt, an unexpectedly refreshing dessert that can perfectly substitute an ice cream. Fragrant, creamy and delicious.

Ingredients

  • 350 gr fresh strawberries (300 gr strawberry purée)
  • 1-2 tbsp granulated sugar
  • 1 tbsp liquer
  • 150 gr honey
  • 30 gr glucose syrup
  • 550 gr strained Greek yogurt

Instructions

  • Wash the strawberries very well, cut them into small pieces and add them in a bowl with a lid. Add the sugar and the liqueur and mix. Leave overnight in the refrigerator.
  • The next day add the strawberries (without the juice they released) in the blender and beat until pureed.
  • Add the honey and glucose syrup. Beat well.
  • Add the strawberry puree and the strained Greek yogurt to the bowl of the ice cream machine. Beat for at least 20 minutes or as long as the ice cream machine instructions state.
  • Add the mixture to a bowl with a lid and put in the freezer.
  • Remove from the refrigerator half an hour earlier before serving.
  • Serve with strawberries and granola.

So this was my recipe for a refreshing strawberry dessert, strawberry frozen yogurt. Ideal for hot summer days. Everyone will love it, especially the kids.
