Banana bread with honey, olive oil and whole wheat flour. An ideal snack that will satisfy your sweet cravings and will fill you with energy during a demanding day. It is also ideal for those who avoid refined sugar, as it contains only honey.
Below you will find various alternatives regarding the flour you can use, the oil but also options in case you are not a fan of nuts.

MAY I USE ANOTHER TYPE OF FLOUR?
I wanted to make a healthier version of the banana bread I preferred to use whole wheat flour. If you do not want to, you can easily replace it with flour for all purposes. Do not forget to use exactly the same amount.
IS THIS RECIPE GLUTEN FREE?
If you are gluten intolerant then you will be happy to tell you that this recipe is for you. You just have to replace the flour I used with an equal amount of gluten-free flour.
MAY I USE ANOTHER TYPE OF OIL?
As in the above cases, so in that of olive oil there is flexibility. So, instead of olive oil you can use sunflower oil. While if you want to give another note to your banana bread you can add coconut oil.
DOES THE RECIPE CONTAIN SUGAR?
This banana bread recipe does not contain refined sugar. I chose not to use granulated sugar and added honey as honey has a relatively low glycemic index, making it one of its best substitutes.
According to studies, replacing granulated sugar with honey could actually lower blood sugar levels and prevent weight gain or even help in weight loss.
My ally in this path was once again my favorite honey from beautiful Chios island. And it is none other than The Queen & the Sea honey which easily stands out among others. Only by looking at its color you can understand that we are talking about a honey full of flavor and aroma.

MAY I USE THE MIXTURE FOR MAKING MUFFINS?
If you are in a mood for muffins instead of a banana bread then go for it! Of course you have to adjust the baking time. For making muffins you will need about half the baking time, ie 22-25 minutes.
CAN I SKIP THE NUTS?
The mixture for this banana bread contains a small amount of nuts mix. My own mix consisted of walnuts, almonds and cashews. But if you want you can skip the nuts mix, or you may add only one kind e.g. walnuts only.
I do not have a mixer, can I still make the banana bread?
If you do not have a mixer you still can make this super moisture banana bread. The recipe is so easy and you can make it without a one. You can even stir the mixture with a fork.



Banana bread with honey, olive oil and whole wheat flour
Equipment
- loaf pan 34cm*10cm
Ingredients
- 120 ml olive oil
- 270 gr honey The Queen & the Sea
- 3 eggs, large in room temperature
- 3 mashed ripe bananas, (around 330 gr)
- 190 gr strained Greek yogurt
- 330 gr whole wheat flour
- ⅔ cup finely chopped nuts mix
- 1 ½ tsp baking soda
- ½ tsp salt
- 1 tsp ground cinnamon
Instructions
- Preheat the oven to 170 ° C and grease a 34cm*10cm loaf pan.
- In a stand mixer add the olive oil and honey. Whisk.
- Then add the eggs, mashed ripe bananas and strained yogurt. Whisk just until combined.
- Add the flour, the nuts, the soda, the salt and finally the cinnamon. Whisk just until combined.
- Pour the mixture into the loaf pan and bake on a preheated oven for 50-60 minutes, or until a clean knife inserted into the center comes out clean.
- Set aside to cool for 10 minutes inside the loaf pan, and then transfer the banana bread to a wire rack and to completely cool.
