Beetroot burger with grilled cow cheese Mastelo. A veggie burger that will impress you, with its appearance and its taste.
I guess that when you hear the word burger, the first thing that crosses your mind is a juicy beef burger. Right? But what would you say if we tried something different? Different and impressively delicious like the beetroot burger with Mastelo.
Starting from the bottom up, the beetroot burger with Mastelo consists of a green salad with orange dressing, onion pickles, a refreshing yogurt sauce, a fantastic beetroot burger, and at the top grilled cow Mastelo.
Is a burger a decent burger without french fries? No, it is not. And you know it. So once again I didn’t resist and made my favorite over-fried potatoes. You will find a recipe for the most crispy oven-fried potatoes here.



Beetroot burger
For making the beetroot burger you don’t need to boil or roast the beetroot. We will use it raw. All you need is a good grater as we will grate all the ingredients.
For a better result and after grating the beetroot, and the rest of the ingredients, I suggest the following. Either to chop them into smaller pieces with a sharp knife or use a blender.


Beetroot burger with grilled cow cheese Mastelo
Ingredients
- 200 gr raw beetroot
- 1 onion, finely grated
- 2 clove of garlic, minced
- ½ tsp cumin
- 1 tbsp olive oil
- 1 egg
- 150 gr goat cheese Mastelo, grated
- 75 gr oats
- 50 gr flour
- salt
- freshly ground black pepper
For the dressing
- 2 tbsp olive oil
- 2 tbsp orange juice
- ½ tsp mustard
- salt
- freshly ground black pepper
For the sauce
- 200 gr strained Greek yogurt
- ½ garlic clove, optional
- 2 tbsp fresh basil, finely chopped
- salt
- freshl
For serving
- 350 gr cow cheese Mastelo
- 4 burger buns
- onion pickles
- green salad
Instructions
- Wash and peel the beets and grate them. Finely chop the onion and garlic. For better results add the vegetables to a blender or chop them as finely as possible with a sharp knife.
- Grate the goat cheese and set aside.
- In a large bowl, add all the ingredients and mix well. If the mixture seems juicy you can add 1 tbsp oats or 1/2 tbsp flour.
- Shape 4 large burgers or 6 smaller, and place them in a pan. Bake for 30 minutes in a preheated oven at 180 ° C. After the first 15 minutes have passed, turn them over.
For the dressing
- In a small jar with a lid, add all the dressing ingredients. Close the lid and shake.
- Spread the dressing on the salad and set aside.
For the sauce
- In a bowl add the yogurt and then the chopped garlic and basil. Stir and add salt and pepper. Set aside.
For the serving
- Cut the mastelo cow cheese into slices.
- Coat a grill pan with some olive oil. Add the slices of the cow cheese and grill over medium to high heat. Grill for about 3-4 minutes, or until softened. Turn over and grill on the other side.
- On the bottom of the burger bun add some green salad, yogurt sauce and then the onion pickles. Add the beetroot burger and then a slice of Mastelo grilled cow cheese. Add the top of the bun and enjoy.
