Quinces are one of those fruits that will either make you wait like crazy for their season, or you will almost hate them. I belong to the first category because I love them. This year the first recipe dedicated to this unique fruit is our favorite rice pudding with poached quinces.

CHARACTERISTICS OF THE RECIPE
The recipe for our favorite rice pudding with poached quinces can be said to be quite difficult. And this is because, at least it has happened to me many times, there is a risk that the rice milk will seize and burn. For this, the rice pudding should be cooked on medium heat and in a heavy-bottomed pan. If you take care of this stage then things are easy.
The quinces will be poached in red wine and warm spices, such as cinnamon and cloves. It’s an easy process that will take about half an hour. After the quinces are cooked, we will remove them from the pot and leave the liquid elements in it. We will continue boiling until we get a thick sauce.

INGREDIENTS OF THE RECIPE
So if you want to enjoy this warm and special rice pudding, all you have to do is get the following:
- milk,
- Carolina rice,
- sugar, corn flour
- quince,
- cinnamon, cloves, bay leaves
- oranges and lemons
- dried grapes
- Red wine
I chose to serve my fall dessert with cinnamon and walnuts. So if you find an interesting proposal, don’t forget to add them to your list.


Rice pudding with poached quinces
Ingredients
For the rice pudding
- ½ cup Carolina rice
- 1 ½ cup water
- ⅓ cup sugar
- 4 (3+1) cups milk
- 2 tbsp corn flour
For the poached quinces
- 2 quinces, peeled, cored and in quarters
- 4 tbsp raisins
- 400 ml red wine
- 400 ml water
- 2 cinnamon sticks
- 2 bay leaves
- 2 cloves
- 2 thin slices lemon
- 2 thin slices orange
For serving
- walnuts
- cinnamon
Instructions
For the rice pudding
- Add the water to a saucepan and bring to a boil. Once it boils, add the rice and simmer for 15 minutes.½ cup Carolina rice, 1 ½ cup water
- Then add 3 fl. milk with sugar. Mix well until the sugar dissolves.4 (3+1) cups milk, ⅓ cup sugar
- As soon as it boils, add the rest of the milk in which we have dissolved the corn flour. Simmer for about 10 minutes until it starts to thicken.2 tbsp corn flour
- Pour the contents into 4 large bowls and let it come to room temperature. As soon as it cools down, add the quinces, the raisins along with the red wine sauce.
- Serve with walnuts and cinnamon.walnuts, cinnamon
For the poached quinces
- Add the wine to a large saucepan and bring to a boil. Boil for 2 minutes to evaporate the alcohol and then add the water. Bring to a boil and add the cinnamon, bay leaf, cloves, and lemon and orange peels.400 ml red wine, 400 ml water, 2 cinnamon sticks, 2 bay leaves, 2 cloves, 2 thin slices lemon, 2 thin slices orange
- Finally, add the quinces to the pot together with the raisins. Boil for about 25-30 minutes, or until the quinces are soft.2 quinces, peeled, cored and in quarters, 4 tbsp raisins
- Remove the quinces and simmer for about 10 minutes, or until you end up with a thick sauce.

So this was my recipe for our favorite rice pudding served a little differently. We take advantage of this unique and special autumn fruit and serve them together. Easy rice pudding with poached quinces.
