Bruschetta with cow cheese Mastelo and grapes. Or else, the best way to celebrate the coming of autumn.
Every year during early September a very beautiful picture crosses my midn. What is it? A vineyard with bunches of ripe grapes, a large tree and under it an nice heavy wooden table. The weather is still hot, but there is also a refreshing breeze blowing our faces. Great company, plenty of wine and good food.
Since I could not bring to life this one exactly as I imagined it, I thought of trying to make an effort in order to approach it. I had great company, as well as good wine. What I was missing was good food that would fit perfectly in the setting.
For me, a bruschetta is almost synonymous with wine. And how could it not be. It is the easiest, fastest and most interesting snack you can make with not many ingredients. Especially if you have ingredients of great quality.
Just like in this case, where I added to my bruschetta my favorite Mastelo cow cheese. But why did I choose this particular cheese? I chose it mainly because of its composition as the Mastelo cow cheese, when baked, evokes its milky taste that characterizes it. But the most impressive thing is that it does not melt, acquiring a chewy texture without losing its shape.

Bruschetta with cow cheese Mastelo and grapes
Ingredients
- 1 baguette cut diagonally into thin slices
- 4 tbsp olive oil
- oregano
- salt
- 200 gr Mastelo cow cheese
- 10 tbsp honey
- red grape
- 6 tbsp nuts, broken into smaller pieces
Instructions
- Add the olive oil, salt and oregano in a bowl. With the help of a brush, spread the olive oil into the thin slices of the baguette.
- Spread the slices in a baking pan and bake them for 10΄ at 200°C or until golden brown.
- Cut the Mastelo cow cheese into slices and grill it over medium to high heat on both sides until soft. Set aside.
- When the bruschettas are ready, add a piece of Mastelo on top, add a tbsp. honey, grapes and nuts. Enjoy!
